3 of Liv’s Most Popular Dinner Recipes

Imagine having a family of 4, all with different taste buds… all hungry, all at once! There’s not enough time for takeout, there’s things we have already at home so why not whip something up real quick? I got you!

Here’s my 3 go tos for quick, easy and popular dinner meals:

ENCHILADAS

Prep time: 10 min.
Cook time: 30 min.

Makes 8-10 rolls, the perfect dinner (with leftovers!) for a family of 4.

ingredients

• 3-4 lbs of chicken thighs, skinless and boneless
• 1 medium sized onion (diced)
-Salt to season
• 2 packages of cream cheese (8oz each)
• 1/2 pint whipping cream
• 1 package flour tortilla (10 count, 16oz)
• 1 can green chilli enchilada sauce (19oz)
• 3 cups shredded cheddar cheese
• salsa for topping!
Kick it up! Cut up banana peppers, jalapenos or olives to layer with the salsa. Or Jax’s pick? More onions! He lovessss his onions.

let’s make it!

1. Boil chicken and shred placing into a large bowl.
2. Add onion and sprinkle salt to taste.
3. In a separate bowl, combine cream cheese and whipping cream. Mix until smooth.
4. Add cream cheese blend to chicken and onion, mix together.
5. Place filling onto each tortilla, roll up and place into a lightly greased 9×13 pan.
(will fit 8-10 rolls will fit depending on thickness)
6. Pour green chilli enchilada sauce over and sprinkle cheese on top.
7. Bake at 350 degrees for 30 minutes.
 
Serve with salsa.

PORK + BEANS

Prep time: 10 min.
Cook time: 15 min.

Makes A BIG POT, perfect for sharing with 6-8 people.

let’s make it!

INGREDIENTS

• 4 cans of Van Camps pork and beans 

• 1 package red hot dogs

• 2 Portuguese sausage: one hot and one mild (this is the secret to layering the flavors)

• 1 white onion

• bacon: optional

• 4 tablespoons brown sugar

• BBQ sauce: 1 firm squeeze 

HOW TO:

1. Mix all meats until brown on high. Add in onions until clear, then add in beans, sugar and sauce. 

2. Simmer for 15 minutes on low. 

3. In the meantime, make a pot of rice. There’s nothing better than hot rice with a scoop of warm pork and beans

4. Serve in a bowl with a bowl hugger ’cause eat pork and beans, make it cute! LOL.

BAKED SPAGHETTI

Prep time: 10 min.
Cook time: 30 min.

Makes a 9×13 pan; ~ 15 pieces.

ingredients

• 1 box of spaghetti noodles

• 2 jars spaghetti sauce (any brand)

• I lb hamburger 

• 1 chopped onion

• 6-8 sliced mushrooms

• 1 block of cream cheese

• 2 bags of Mexican or cheddar shredded cheese

let’s make it!

• Boil the noodles and drain.

 

• Immediately mix in the block of cream cheese so it coats the noodles. Mix until the cream cheese is dissolved and noodles are soft.

 

• Turn your stove on to 350 degrees to heat it up while you make the sauce.

 

• Set noodles aside and brown meat and onions.

 

• Add in mushrooms. Once mushrooms are combined, add in sauce.

 

• In a 9×13 pan, begin layering!

 

1) Add sauce to coat the base of the pan and sprinkle lightly with cheese.

2) Add a layer of noodles

3) Add another layer of sauce and sprinkle lightly with cheese.

4) Add another layer of noodles.

5) Add your final layer of sauce.

6) Top generously with cheese  

 

• Cover the pan with foil and bake for 30 mins at 350 degrees.
